Barry has become completely converted to thermal cooking since the Newbury Motorhome Show earlier this year. At the show he bought a Mr Ds Thermal Cooker and after using it for the first time he was completely hooked.

We caught up with Barry and Betty in Malvern last weekend at the Western Motorhome Show and he was anxious to buy a cake tin. His first attempt was a Wrights cake mix which sunk a little in the middle but he told me it still tasted deliciuos. This I explained to him was  probably due to not long enough simmering so off he went to have another try.

Yesterday I received this email which shows that Barry has by the longer simmering he has now produced a perfect Wrights carrot cake and without an oven.

I wander if we will see him on BBC’s Great British Bake Off sometime showing Mary Berry and Paul Hollywood a new way to cook cakes in a Mr D’s Thermal Cooker.

I have been in contact with Debbie at Wrights & she said you might be interested in the photos
The cake mixture was mixed with an electric whisk, the cake tin was greased all round with greaseproof paper top & bottom
It was placed in the pan using your trivet in hot water, I found 3½ pints to be just the right amount, I then brought it to the boil
& simmered  for 40 mins, put in the thermal cooker & left it overnight. The result was excellent, a moist cake fully risen.

Boiled fruit cake - Mr D's Thermal Cook Book

I thought today that I would give you a recipe that we have done so many times and always gets great comments when people try it. This fruit cake was one of the first recipes I tried and I couldn't believe how good the cake was. You really must give it a try.

Apart from your thermal cooker you will also need a Mr D's Cake Tin or fixed base cake tin, some baking or greaseproof paper and something to raise the cake tin from the bottom of the inner pot.

ingredients

  • 375 gms of mixed dried fruit.
  • 3/4 of a cup of brown sugar.
  • 1 tsp of mixed spice.
  • Grated rind of an orange.
  • 1/2 a cup of water or orange juice.
  • 1/4 of a cup of whisky you could use sherry instead (optional).
  • 125 gms of butter.
  • 2 lightly beatened eggs.
  • 1 cup self raising flour.
  • 1 cup plain flour.
  • 1/2 tsp of soda bicarb.
  • OPTIONAL: you can replace the water, liquor and sugar with a 450 gram tin of crushed pineapple.

method

  1. lace the dried fruit into a saucepan with the brown sugar, mixed spice, orange rind, water, liquor and butter.
  2. Bring the mixture to the boil and simmer uncovered for 5 minutes.
  3. Allow the mixture to cool.
  4. Mix in the eggs.
  5. Stir in the sifted flour and soda bicarb.
  6. Line a 16 cm round cake tin or Pyrex dish (one that fits nicely into the inner pot) with baking paper.
  7. Spoon the mixture into this prepared cake tin.
  8. Lay a round of baking paper on top of the cake mixture then cover the tin with a trimmed piece of foil to prevent condensation from seeping in.
  9. Place a trivet or metal pastry ring in the base of the inner pot and rest the cake tin on this. (If you are using the 3 litre pot the cake tin can sit on a folded pad of foil).
  10. Pour enough hot water into the inner pot so that the level comes halfway up the sides of the cake tin.
  11. Bring the water to the boil.
  12. Put the lid on and turn down the heat to simmer gently for 30 minutes.
  13. Turn off the heat and transfer the inner pot into the insulated container for a minimum of 3 to 4 hours.

Christmas cake cooked in Mr D's Thermal CookerIf you haven’t made your Christmas cake or Christmas pudding yet there is still time to do so in your thermal cooker.

They only need around 35 minutes of simmering and then cook without power over night. That is a saving of around 3.5 hours of oven fuel.

Last weekend Jen made three Christmas cakes in our Mr D’s® Thermal Cookers for the Gateway stand at the Brockenhurst (in the New Forest, Hampshire) Christmas evening this Friday 2nd. December 2011.

The Brockenhurst Gateway Club http://www.gatewaybrock.org.uk/ is a club for adults (age 16+) with learning disabilities.

This year for the first time the club are having a stand where they will be giving out free Christmas cake and mulled fruit juice which will be kept hot in a Mr D’s® Thermal Cooker.

If you are able to come the details are – 18.00 -20.00 to enjoy a fun evening; bring the children to hopefully meet Santa; see the Christmas lights switched on; join in the seasonal activities, late night shopping and of course try some of the Christmas cake and mulled juice.
